The Marlborough Sounds region of the South Island of New Zealand is where the Green-lipped Muscle is found. The water is deep and cold and the area is ideal for raising the mussels.

The mussels are grown using a “growing line”, which is a single rope attached to a set of buoys and ropes. The growing line is placed in the water and after 3 -6 months is pulled up, covered with young mussels. The young mussels are thinned out and replaced onto a thicker, longer rope where they remain for approximately 18 months until the mussels are approximately 100 mm.

The farming industry closely monitors the progression of the growing mussels and the conditions they are grown in. This is to ensure that they meet the standards of purity (according to industry codes) necessary to grow the mussels and to prevent any contamination by pollutants.

Once the mussels reach maturity at approximately 100 mm, the shell is removed and the edible parts are freeze-dried. Freeze-drying is a process by which the use of cold temperatures and vacuum remove the water from a substance. In this way the physiological makeup of the organism remains the same and important nutrients are preserved.

One mussel, dried, can be broken down as follows:  Protein approx. 62%, Complex Carbohydrates approx. 13%, Lipids approx. 5%, Minerals approx. 6%, chondroitin sulfates approx. 12 %.
